Hearty Chorizo Salad With Balsamic Mayo

I reluctantly call this a “salad” because it’s technically a salad, but the reality of it doesn’t match the image of a salad in my mind. I suppose you could call this a winter salad.


  • Chorizo
  • Potatoes
  • Cherry tomatoes
  • Rocket
  • Red onion
  • Parmesan
  • Pine nuts

Balsamic Mayonnaise

  • Oil
  • Balsamic Vinegar
  • Egg yolk
  • Vinegar
  • Mustard
  • Brown sugar
  • Garlic
  • Salt & pepper


  1. Dice and boil the potatoes.
  2. Make the balsamic mayonnaise by mixing the ingredients together.
  3. Slice then lightly fry the red onion in a drop of oil.
  4. Dice the chorizo and cherry tomatoes.
  5. Add the boiled potatoes, cherry tomatoes and chorizo to the frying pan with the onion.
  6. When all is cooked, turn off the heat and add the remainder of the ingredients.
  7. Stir until the rocket is wilted, then serve.
