Eye fillet is really easy to over cook, leaving it rubbery. Fortunately pork eye fillet is also exceptionally easy to cook properly if you know how. Here’s how to cook pork eye fillet perfectly every time:
Pan Fried Pork Eye Fillet
- Slice the pork eye fillet into medallions
- Put a little oil and a little butter in the frying pan
- Add the medallions flat in the pan and leave them (only moving them to make sure they don’t stick to the pan, if your pan is sticky) until you can see that the sides are at least cooked half way up
- Turn the medallions over. They should be slightly browned on the bottom. Leave them until the underside is cooked (this won’t take long). If you didn’t cook them all the way up the sides in step 3, then you’ll see when they’re done by looking at the sides. Take this opportunity to prod the pork eye fillet so you become familiar with the springiness of perfectly cooked eye fillet – this will improve your technique for future endeavors
- Take them out the frying pan
Oven Baked Pork Eye Fillet
- Put the eye fillet in an oven safe vestibule (whatever you usually use). Do not cut it
- Put a few slices of butter atop and a few drops of oil to stop the butter burning. Cover with your preferred seasoning (at least salt and pepper, but perhaps some green herbs, like rosemary)
- Cook the eye fillet in the oven for 25-40 minutes and remove when it starts to brown
