This is a quick, cheap and healthy side salad and is a great accompaniment to a Mexican main or any meal.
Ingredients
- Corn
- Beans
- Tomato
- Lemon or lime
- Coriander
- Spinach (optional)
Directions
- Chop up the tomato and coriander, including the coriander stalks (which is where most of the flavor is).
- Fry the corn in oil until browned a little.
- Add the beans and cook for a minute or so.
- Turn the cook top off and add the remaining ingredients, squeezing the lemon or lime in and toss to finish.
