Mexican Side Salad

This is a quick, cheap and healthy side salad and is a great accompaniment to a Mexican main or any meal.

Ingredients

  • Corn
  • Beans
  • Tomato
  • Lemon or lime
  • Coriander
  • Spinach (optional)

Directions

  1. Chop up the tomato and coriander, including the coriander stalks (which is where most of the flavor is).
  2. Fry the corn in oil until browned a little.
  3. Add the beans and cook for a minute or so.
  4. Turn the cook top off and add the remaining ingredients, squeezing the lemon or lime in and toss to finish.
