Teppan Yaki Soba Noodles

This is my favourite money saving, quick, healthy meal (ok, it’s not super healthy because it uses a packet sauce, but it’s pretty good, nutritious and delicious).

Ingredients

  • Miyatake Teppan Yaki Soba Noodles (one packet per person).
  • Vegetables (whatever you want to use, I recommend carrots, broccoli, capsicum and cauliflower).
  • Eggs (one per person). Optional, but highly recommended for nutritional, aesthetic and texture reasons.
  • Sesame oil.

Directions

  1. Put some sesame oil in the pan to lubricate the pan (your not deep, nor shallow frying here).
  2. Fry the vegetables until cooked. While they’re cooking, open the noodle packets and wash the noodles.
  3. Once the veggies are cooked, add the noodles and stir in the powder that comes in the noodle packet. You’re going to want to sprinkle it around and stir so it doesn’t clump and spreads evenly.
  4. Plate up your noodles then fry an egg until the egg is cooked but with a soft yolk. Sit the friend egg atop of the noodles and you’re done!
