This is more of a meal idea than a recipe, but here are the directions for making the meal in the picture.
Ingredients
- Chicken tenders (you could buy chicken and batter it yourself, if you prefer)
- Tonkatsu sauce (the one I bought was too thick, so I watered it down with mirin to make a more liquid sauce)
- Aioli mayonnaise
- Rice
- Maple syrup
- Mirin (optional)
- Salad leaves
- Sesame dressing
- Asian salad (I bought a pack that had everything I wanted mixed already, which was carrots, red cabbage, white cabbage, etc. as per the picture. I threw away the nasty dressing that came with it)
- Rice vinegar
Directions
- Mix the Asian salad with rice vinegar and a splash of maple syrup to pickle the salad (the vinegar gets drained later)
- Cook the chicken tenders
- While the chicken tenders cook, start cooking the rice (it won’t take as long as the chicken). I add a little mirin to my rice as it cooks
- Mix the salad leaves with the sesame dressing and put it on a plate
- When the rice is cooked, pour some of the liquid from the Asian salad pickle into the rice and stir it up
- Put the rice on top of the salad leaves and aioli mayonnaise dribbled nicely on top of the rice
- Drain the rest of the pickle and put the pickled Asian salad on the side of the plate
- Put the chicken tenders on top, and cover with tonkatsu sauce as desired
