Tonkatsu Chicken Recipe

This is more of a meal idea than a recipe, but here are the directions for making the meal in the picture.

Ingredients

  • Chicken tenders (you could buy chicken and batter it yourself, if you prefer)
  • Tonkatsu sauce (the one I bought was too thick, so I watered it down with mirin to make a more liquid sauce)
  • Aioli mayonnaise
  • Rice
  • Maple syrup
  • Mirin (optional)
  • Salad leaves
  • Sesame dressing
  • Asian salad (I bought a pack that had everything I wanted mixed already, which was carrots, red cabbage, white cabbage, etc. as per the picture. I threw away the nasty dressing that came with it)
  • Rice vinegar

Directions

  1. Mix the Asian salad with rice vinegar and a splash of maple syrup to pickle the salad (the vinegar gets drained later)
  2. Cook the chicken tenders
  3. While the chicken tenders cook, start cooking the rice (it won’t take as long as the chicken). I add a little mirin to my rice as it cooks
  4. Mix the salad leaves with the sesame dressing and put it on a plate
  5. When the rice is cooked, pour some of the liquid from the Asian salad pickle into the rice and stir it up
  6. Put the rice on top of the salad leaves and aioli mayonnaise dribbled nicely on top of the rice
  7. Drain the rest of the pickle and put the pickled Asian salad on the side of the plate
  8. Put the chicken tenders on top, and cover with tonkatsu sauce as desired
